Lemon Coconut Chia Seed Mousse

I've got lots of lemon lovers in my house and this is a healthier alternative to lemon mousse, tart or lemon meringue pie. It takes about 10 minutes to make and is soooo delicious.

Lemon Coconut Chia Mousse
1 can coconut milk
1/2 cup lemon juice
Zest from 2 small lemons (or 1 large)
2-3 tbsp sugar or maple syrup
1/4 tsp turmeric powder
4 tbsp chia seeds

Whisk all ingredients together, adding chia seeds last. Adjust sugar/maple syrup to your desired sweetness. You can also use a sweetener like Stevia. Chill in the fridge for a couple of hours or best left overnight. The ingredients will "set" as the chia seeds absorb the liquids. Once set, stir the pudding to redistribute the chia seeds which may have settled towards the bottom. If you find it’s not setting add another tablespoon or two of chia seeds.

Serve on its own or topped with some whipped coconut cream or coconut yoghurt.

Chia seeds are high in fibre, protein and omega-3 fatty acids and give this pudding a lovely texture.
