Courgette Fritters with Tahini Miso Dressing

Lemony courgette fritters with my favourite tahini miso dressing. Delicious served warm or at room temperature.

3 large courgette, finely grated 
1/4 cup flour 
1/4 cup feta cheese
2 cloves garlic, crushed
1 large egg, beaten
1 tsp lemon zest

Drain courgette in colander and then squeeze out all remaining moisture in a tea towel. Mix all ingredients and lightly fry in light olive oil or avocado oil.

Tahini Miso Dressing
4 tbsp tahini
Juice of 1 lemon
2 garlic cloves, crushed
2 tbsp white miso paste
4 tbsp water
S&P to taste

Whisk all ingredients until smooth. Also delicious on top of roasted vegetables or salad.
