Thai Rainbow Chicken Salad
Another great way to get in a whole range of rainbow vegetables. Shredded red cabbage, gem lettuce, red pepper, carrot ribbons, shallots, coriander and spring onions. Topped with roasted chicken breast, satay sauce dressing and black sesame seeds.
Thai Satay Dressing
3 tbs peanut butter
2 tbs tamari or soy sauce
1 tbs sweet chili sauce
1 tsp mirin (rice wine vinegar)
1 tsp sesame oil
1 garlic clove
1, 2cm piece of ginger, chopped
Blend all ingredients in a mini food processor or blender, add water to reach desired consistency (I prefer it quite thin). Add more or less of any ingredient after tasting to suit your palate.
