Chicken, Apple & Pomegranate Seed Salad

These gem lettuce cups are filled with a creamy, delicious chicken salad. I prefer to only use chicken breasts but you can also add dark meat if you prefer. It is also delicious on toasted seeded bread or in a wrap for the lunch box. 

Salad
4 cooked chicken breasts, shredded (& cool)
1 medium red onion, finely chopped
1 apple (red or green), chopped
3 celery ribs, thinly sliced
1/2 cup pomegranate seeds
3 tbsp chopped fresh herbs (parsley, basil, tarragon)

Dressing
1/3 cup avocado oil mayonnaise (or regular)
1/3 cup greek yoghurt or sour cream
3 tbsp vinegar (red, white or apple cider)
1 tbsp water (optional - if you prefer a thinner dressing)
Salt & pepper to taste

Combine salad ingredients in a medium bowl and toss in mixed dressing. Serve on top of gem lettuce leaves, on sandwiches or in wraps. It is also delicious topped with toasted nuts and seeds. Keeps for a couple of days in the fridge.
