Black Bean Brownies

Many of you were skeptical about my chickpea chocolate chip cookie recipe, until you tried them...these black bean brownies are another protein-packed, gluten free delight. They take about 10 mins to prepare and 20 mins to bake. The kids love them too although might be best to wait to tell them about the beans until they have gobbled them all up.

Ingredients
1 can black beans, rinsed well
1/2 cup gluten-free oats (40g)
2 tbs cocoa powder
1/4 coconut oil, melted (40g)
1/3 to 1/2 cup maple syrup (your choice on how sweet you like them)
1/2 tsp baking powder
2 tsp vanilla extract
1/2 cup chocolate chips (more to scatter on top if you like) (115g)

Blend all ingredients except chocolate chips until you reach a smooth consistency (I used my Vitamin and it worked perfectly). Transfer to bowl and mix in chocolate chips. Spread evenly in prepared 8 inch x 8 inch baking pan. Bake at 350 deg F (170 deg C) for about 20 mins. Delicious warm or cooled.
