Raspberry Pomegranate Chia Seed Parfait

I'm really enjoying finding new ways of incorporating chia seeds into desserts. I love the texture they give but also feel good knowing they deliver so much in terms of fibre, protein and omega-3s. If you can incorporate those benefits into a dessert it is a win-win as far as I am concerned!

For this parfait I layered pureed raspberries (with a little maple syrup to soften the tartness), Greek yoghurt and chia seeds mixed with pomegranate juice (1/4 cup chia seeds, 1 cup pomegranate juice, left overnight to firm up a bit). You can adjust quantities of pomegranate juice depending on how thick you like the chia mixture.

This is delicious for dessert but could also be layered with oats or granola for breakfast. You can also vary the fruits you use for the puree (blueberries, strawberries, mango) and the juice you mix with the chia seeds.
