Blueberry Banana Oat Muffins
These are delicious, sweetened only with maple syrup, bananas and the natural jammy blueberries.
3 ripe bananas, mashed
2 eggs
1/2 cup Greek yoghurt
1/4 cup melted butter or ghee
1/4 cup maple syrup
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1 tsp mixed spices (cinnamon, nutmeg, ginger)
1/4 tsp salt
1 cup wholewheat flour
1 cup oats
1 punnet blueberries (200g)
Mix all wet ingredients (except blueberries) and combine with dry ingredients. Mix until just combined. Gently fold in the blueberries. Bake at 190 deg C (375 F) for about 20-25 minutes until golden brown. Especially delicious when served warm.
