Summer Tomato Gazpacho

I absolutely love cooking but sometimes I don't have enough time (or energy) for a complicated recipe. Kids, work and life can easily get in the way. This gazpacho is so quick and easy to make and is perfect for lunch/dinner at home or a picnic in the park.

Gazpacho
4 medium, ripe tomatoes (the riper the better!)
1 medium cucumber, peeled and seeded
1 red, yellow or orange pepper, chopped
1 medium shallot, chopped
2 garlic cloves, chopped
2 tbsp fresh herbs (basil, coriander, parsley - your choice)
2 tbsp extra virgin olive oil
1-2 tbsp red wine vinegar
salt & pepper to taste

Roughly chop all ingredients and blend until smooth. I use my Vitamix which gives a great consistency. Chill for a few hours and then garnish with chopped shallots, cucumber, pepper and tomato. If you like an extra kick then blend in some red pepper flakes or fresh chili.
