Mexican Pico de Gallo & Cucumber Salad
A few simple ingredients to create some bold flavours.
Pico de Gallo
1 punnet baby plum tomatoes, finely chopped (you can substitute 4 regular tomatoes but remove the seeds)
1 small red onion, finely chopped
1 jalepeno, finely chopped (seeds removed)
1/2 cup coriander, finely chopped
1/4 cup lime juice
Salt to taste
Allow to marinate for about 15 minutes and serve with slotted spoon (to remove excess liquid)
Lime juice & salt to taste
Cuernavaca Style Cucumber Salad
2 cucumbers, sliced in half lengthwise, seeds removed and cut into thin half moons
1/2 red onion, sliced thinly
2 tsp chopped coriander or parsley
1 tsp chopped oregano
Juice from 2 limes
Salt to taste
