Green Burgers

I’m always trying to find protein-rich and nutrient-dense plant-based options for my vegetarian son. These ✅ all the boxes. Inspired by @acmackinnon who is an excellent vegan chef and instructor. 


Green Burgers
4 large handfuls raw spinach
150g peas (thawed, from frozen)
150g shelled edamame beans (thawed, from frozen)
2 spring onions, chopped 
3 tbs mixed fresh herbs (dill, parsley, basil) or 1 tsp dried herbs 
100g cooked quinoa 
70g ricotta
3 eggs, beaten
50g breadcrumbs or oats
50g nutritional yeast
3 tbs lemon juice
1 tsp sea salt

In a food processor pulse peas, beans, spinach, onions and herbs. Add remaining ingredients and form into patties (use about an ice cream scoop size of mixture). Refrigerate on parchment paper for 15 minutes until firm. Lightly fry in ghee or light olive oil until golden on both sides. 

Delicious served with dill yoghurt dipping sauce, hummus or sweet chilli sauce.
