Chickpea Chocolate Chip Cookies
Study break! Here is a little treat packed full of plant protein. I was initially unsure but trust me they are delicious!
Gluten free and no eggs required which is just as well given that they are hard to come by these days, at least where I am. Inspired by @earthyandy .
Chickpea, Almond & Chocolate Chip Cookies
1 can chickpeas, drained and rinsed
1/2 cup almond butter
1/3 cup maple syrup
1/2 tsp baking soda
2 tsp vanilla extract
Pinch of salt
1/2 cup chocolate chips
Blend all ingredients in a blender until smooth. Transfer to a bowl and mix in chocolate chips. Drop onto parchment paper lined baking sheets to desired size. Bake for 20 minutes at 170 deg C (350F).
Allow to cool if you can otherwise they are very gooey (or eat them with a fork if you cannot wait!).
